1 tablespoon flaxseed.
1 tablespoon unrefined cane sugar (optional).
Instructions
Preheat the oven:
Preheat the oven to 180 °C (350 °F).
Grease and flour a loaf pan or line it with parchment paper.
Mix the dry ingredients:
In a large bowl, combine the whole wheat flour, ground flaxseed, rolled oats, salt, baking powder, and baking soda.
Prepare the wet ingredients:
In another bowl, beat the eggs with the yogurt, olive oil, and cane sugar until well combined.
Combine the mixtures:
Gradually add the wet ingredients to the dry ingredients, mixing until a smooth, homogenous batter forms. Avoid overmixing to keep the bread from becoming dense.
Pour into the pan:
Pour the batter into the prepared loaf pan and smooth the surface with a spatula.
Sprinkle the rolled oats and flaxseed on top for a crunchy and appealing finish.
Bake:
Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
