Ingredients:
2 cups water
1 cup cane sugar
1 cup freeze-dried pineapple
Juice of 1 lemon (optional, for a citrusy touch)

Popsicle sticks
Instructions:
Preparing the simple syrup:
In a saucepan, combine the water and cane sugar.
Heat the mixture over medium heat, stirring constantly until the cane sugar is completely dissolved.
Once dissolved, remove from heat and let it cool to room temperature.
Rehydrating the freeze-dried pineapple:
Place the freeze-dried pineapple in a bowl and add enough water to cover it.
Let it sit for about 10-15 minutes, or until the pineapple is rehydrated.
Drain any excess water.
Preparing the popsicle mixture:
In a blender, combine the cooled simple syrup, rehydrated pineapple, and lemon juice (if using).
Blend until smooth. If desired, leave some chunks of pineapple for texture.
Filling the molds:
Pour the mixture into the popsicle molds, leaving a small space at the top to allow for expansion when freezing. You can add chunks of freeze-dried pineapple into the molds if preferred.
Insert popsicle sticks into the center of each mold.
Freezing:
Place the molds in the freezer and let them freeze for at least 4-6 hours, or until completely solid.
Unmolding and enjoying:
To easily unmold, briefly dip the molds in warm water.
